So, growing up my mom always used to make Beef Ragu, a delicious beef stew made with a red wine sauce. I bought some corned beef last week and decided why not mix the two? I slow cooked the corned beef while i was at work, VERY easy and delicious.
Ingredients:
about 2.5lb corned beef brisket (with seasoning packet)
few tbl spoons grey poupon
medium chopped onion
2 cloves chopped garlic
cracked pepper
3-4 cups water (make sure the brisket is covered it will evaporate!)
2 medium cubed potatoes
4 chopped carrots
1 cup good red wine
2 cups beef broth
I rubbed the corned beef with grey poupon, opened the seasoning packet and put it on top, threw some onion, garlic, and water in and left it on low for 8 hours, the last couple hours i added in chopped potatoes and carrots. When the corned beef was done i shredded it and put it in a a pot on the stove, poured in about a cup of red wine (remember the rule.... if you wont drink it WHILE you cook... don't cook with it!), 2 cups beef broth and cracked pepper. Let that cook for about an hour on low and then last minute threw my potatoes and carrots back in for about 10 minutes. The flavor i got out of it was the best beef stew i have ever had, the slow cooking of the corned beef before hand really made a huge difference. And the best part? I let the food do all the work. Best thing i have ever discovered are slower cooker liners. They are at your grocery store near the turkey bags, by Tupperware and plastic bags usually. You line the slow cooker with one before you throw everything in, and when its done you just throw it away. Makes the slow cooked on mess non existent :)
